  1. Begin by placing the almonds in a bowl and pouring hot water over them. After 10 minutes, drain them, and peel the skin. Set them aside.
  2. Place the millet in a coriander and pour hot water over it. Then wash the grains under running water for a minute.
  3. Place the millet in a pan and add coconut milk. Give it a mix and cook in low heat until all milk has been absorbed and millet is soft and puffy.
  4. Once the millet is cooked, set it aside to cool.
  5. Then, add the coconut shreds and maple syrup and blend everything together with an immersion blender until smooth. Taste the mixture to see if you like the sweetness. If the mass is too dry, add a little bit of coconut milk. If it is too wet, add a little bit of coconut shreds.
  6. Form the mixture into small balls. Stick an almond into each of them. Then roll them in finely shredded coconut. Refrigerate for an hour to cool and harden. Enjoy!
