  1. In a medium bowl, mix all the dry ingredients: flour, lucuma and baking powder, and a pinch of salt.
  2. Add Greek yogurt, vanilla, egg, and almond milk. Whisk until smooth and set aside for about 5-10 minutes.
  3. Fry your pancakes as usual.
  4. Enjoy immediately with maple syrup or honey.
