  1. In a bowl, mix together the honey and peanut butter until creamy.
  2. Add in the amaranth pop and mix until everything is well coated.
  3. Spread the mixture in a parchment paper lined baking sheet, creating a rectangle. Gently press it down. Place in the freezer for about 30 minutes.
  4. Take the mixture out of the freezer, cut it in half crosswise.
  5. Evenly spread the ice cream on one half, and place the other half on top. Press it gently and freeze it for 2-3 hours.
  6. When ready to serve, cut into individual sandwiches and enjoy!
