- In a bowl, mix together the honey and peanut butter until creamy.
- Add in the amaranth pop and mix until everything is well coated.
- Spread the mixture in a parchment paper lined baking sheet, creating a rectangle. Gently press it down. Place in the freezer for about 30 minutes.
- Take the mixture out of the freezer, cut it in half crosswise.
- Evenly spread the ice cream on one half, and place the other half on top. Press it gently and freeze it for 2-3 hours.
- When ready to serve, cut into individual sandwiches and enjoy!
