  1. Heat oven to 350°F (176°C). Spread oats, salt, and cinnamon on one baking sheet; almonds, pecans, and pumpkin seeds on another. Bake oats on the top rack and nuts on the bottom until toasted, 8-10 minutes.
  2. Remove nuts to cool. Sprinkle coconut over oats and bake 5 minutes more, until golden. Cool 10 minutes.
  3. Combine oats, nuts, and coconut in a large bowl. Stir in amaranth crispies, apricots, and cranberries. Transfer to an airtight container for storage. Enjoy!
