- In a large bowl, mix together the cold water and instant yeast.
- Add in the olive oil, shredded carrots, and chia seeds. Give it a mix.
- Add in the salt, amaranth flour, oats, and all-purpose flour. Using a wooden spoon, mix all of the ingredients together. Then using your hands, knead the dough for two minutes (it'll be sticky).
- Cover the bowl with plastic wrap and keep it in the fridge overnight.
- The next day, scoop out the dough to form about 10-12 buns, roll them in sesame seeds, and place them on parchment paper (optional: you can brush the buns with an egg wash). Bake at 440°F or 225° (fan only) for about 20-23 minutes.
- Take them out of the oven, place a damp towel over them, and let them cool down. Enjoy!
