  1. In a large bowl, mix together the cold water and instant yeast.
  2. Add in the olive oil, shredded carrots, and chia seeds. Give it a mix.
  3. Add in the salt, amaranth flour, oats, and all-purpose flour. Using a wooden spoon, mix all of the ingredients together. Then using your hands, knead the dough for two minutes (it'll be sticky).
  4. Cover the bowl with plastic wrap and keep it in the fridge overnight.
  5. The next day, scoop out the dough to form about 10-12 buns, roll them in sesame seeds, and place them on parchment paper (optional: you can brush the buns with an egg wash). Bake at 440°F or 225° (fan only) for about 20-23 minutes.
  6. Take them out of the oven, place a damp towel over them, and let them cool down. Enjoy!
