- Preheat the oven to 350°F (180°C). Line an 8-inch square pan with parchment paper and lightly oil it.
- In a mixing bowl, combine quinoa flakes, cacao powder, almond butter, 2 tablespoons of water, and vanilla. Mix with a spatula, then use your hands to bring the dough together. If it's too crumbly, add 1 more tablespoon of water.
- Press the dough evenly into the prepared pan using your hands or the bottom of a flat object. Bake for 8-10 minutes.
- Let cool in the pan for 10 minutes, then lift it out and transfer to a cutting board. Then cut into 12 bars while still slightly warm.
- For a topping, melt dark chocolate with a little oil in the microwave in short bursts. Drizzle the chocolate over the bars and add whole almonds. Refrigerate until set. Enjoy!
