  1. Start by roughly chopping the dates and placing them in a bowl. Cover them with boiling water, add baking soda, and give it a mix. Set it aside while you make the batter.
  2. Grease a loaf pan and line it with parchment paper. Set it aside.
  3. To a large bowl, add the milk of choice and mix it with the vinegar. Then add the eggs, olive oil, and vanilla extract. Give it a mix.
  4. Mix in the soaked dates. And then add the flour and quinoa flakes. Give it a mix.
  5. Mix in the chopped walnuts and shredded coconut.
  6. Transfer the batter to the prepared loaf pan. Sprinkle it with some quinoa flakes. And run a knife through the center of the batter lengthwise a few times.
  7. Bake at 350°F (176C°) for an hour. Let cool completely before slicing. Enjoy!
