  1. Preheat the oven to 375 degrees F (190C), lightly oil a small baking dish, and set it aside.
  2. Cut the bell peppers in half and remove the seeds and membranes.
  3. Place the chickpeas in a large bowl and slightly mash it with a fork.
  4. Add the rest of the ingredients and give it all a good mix until everything is combined and stick together.
  5. Divide the mixture between the pepper halves.
  6. Cover the baking sheet with aluminum foil and bake for half an hour.
  7. Increase the heat to 400 degrees (200 C) and bake for another 10 minutes.
  8. Garnish as desired and enjoy!
