  1. Grease and line a 9×9-inch pan with parchment paper.
  2. Microwave the peanut butter for 60 seconds, or until runny.
  3. Stir in maple syrup or honey, oats, puffed quinoa, and vanilla until well combined.
  4. Press the mixture evenly into the prepared pan.
  5. For the topping, melt chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
  6. Spread the chocolate over the bars. Refrigerate for 2–3 hours until firm.
  7. Let sit at room temperature for 15 minutes before cutting into bars. Enjoy!
