- Grease and line a 9×9-inch pan with parchment paper.
- Microwave the peanut butter for 60 seconds, or until runny.
- Stir in maple syrup or honey, oats, puffed quinoa, and vanilla until well combined.
- Press the mixture evenly into the prepared pan.
- For the topping, melt chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
- Spread the chocolate over the bars. Refrigerate for 2–3 hours until firm.
- Let sit at room temperature for 15 minutes before cutting into bars. Enjoy!
