- Line an 8x8-inch baking dish with parchment paper. Set it aside.
- Place the cashews in a food processor and process them until they are finely ground. (If you like some texture, you can finely grind 1 cup of cashews and coarsely grind the remaining 1/2 cup.)
- Add the sacha inchi powder and blend it with the ground cashews for a few seconds. Then add the dates and blend until a sticky ball forms (make sure to stop and scrape down the sides a few times).
- Using a spatula, press the dough into the prepared dish. Refrigerate for 1-2 hours or until set. Slice into bars and enjoy!
