- Place the water and cat's claw in a small pot, bring to a boil, then reduce the heat and simmer for 5 minutes. Remove from heat.
- Split the vanilla bean lengthwise and scrape out the tiny black seeds with the tip of a knife. Add the seeds and scraped pod to the pot along with the cardamom pods. Steep for another 5 minutes, then remove the cardamom and vanilla pods.
- Stir in honey while the tea is still hot so it dissolves fully.
- Heat the milk until steaming. Froth until creamy, reserving the foam.
- Pour the spiced, sweetened cat's claw tea into mugs, filling each about two-thirds. Gently top with the warm milk. Spoon the frothy foam over each latte and top with whipped cream if using. Enjoy!
