  1. Place the water and cat's claw in a small pot, bring to a boil, then reduce the heat and simmer for 5 minutes. Remove from heat.
  2. Split the vanilla bean lengthwise and scrape out the tiny black seeds with the tip of a knife. Add the seeds and scraped pod to the pot along with the cardamom pods. Steep for another 5 minutes, then remove the cardamom and vanilla pods.
  3. Stir in honey while the tea is still hot so it dissolves fully.
  4. Heat the milk until steaming. Froth until creamy, reserving the foam.
  5. Pour the spiced, sweetened cat's claw tea into mugs, filling each about two-thirds. Gently top with the warm milk. Spoon the frothy foam over each latte and top with whipped cream if using. Enjoy!
