- Preheat the oven to 425°F (220°C). Whisk together the all-purpose flour, amaranth flour, baking powder, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs.
- Whisk together the milk and egg. Add the mixture to the dry ingredients and mix gently until a soft, slightly tacky dough forms. Turn the dough onto a lightly floured surface and gently bring it together without kneading much. Pat it to about 1 inch (2.5 cm) thick and cut into 6 rounds.
- Arrange on a lined baking sheet and brush the tops with a little milk. Bake for 12-15 minutes, or until well risen and golden.
