  1. Slice each date in half lengthwise and carefully remove the pit. Place one half at the bottom of each cavity in a silicone mold, pressing it down gently so it lays flat and forms the base layer.
  2. Place a teaspoon of peanut butter over each date, spreading it evenly.
  3. Melt the dark chocolate chips and coconut oil. Then stir in the amaranth crispies.
  4. Spoon the thick chocolate–amaranth mixture over the peanut butter layer, spreading it gently with the back of a spoon (or spatula) until fully covered.
  5. Refrigerate until set.
