- Slice each date in half lengthwise and carefully remove the pit. Place one half at the bottom of each cavity in a silicone mold, pressing it down gently so it lays flat and forms the base layer.
- Place a teaspoon of peanut butter over each date, spreading it evenly.
- Melt the dark chocolate chips and coconut oil. Then stir in the amaranth crispies.
- Spoon the thick chocolate–amaranth mixture over the peanut butter layer, spreading it gently with the back of a spoon (or spatula) until fully covered.
- Refrigerate until set.
