- Add the quinoa flakes and blend until a thick, uniform dough forms, scraping down the sides as needed.
- Transfer the mixture to a bowl and chill for 30 minutes to firm up.
- Scoop small portions and roll into bite-sized balls, then place them on a parchment-lined tray.
- Refrigerate the balls for 15 minutes to help them hold their shape.
- In the meantime, melt the chocolate chips with the coconut oil using a double boiler.
- Dip each ball into the melted chocolate to coat evenly, garnish with crushed pistachios, and refrigerate until the chocolate is fully set. Enjoy!
