  1. In a large bowl, mix together the instant oats, ground cinnamon, baking soda, baking powder, salt, and sacha inchi powder.
  2. In a separate bowl, mix the peanut butter, maple syrup, vanilla extract, and egg until smooth.
  3. Add the wet ingredients to the bowl with the dry ingredients. Mix until well combined. The mixture will be sticky.
  4. Place the mixture in the fridge for about 30 minutes.
  5. Scoop out about a tablespoon's worth of dough. Roughly shape it into a ball with your hands, place it on a parchment paper-lined baking sheet, then flatten it slightly into a cookie shape. Repeat with the rest of the dough.
  6. Bake at 350°F (176°C) for 8-10 minutes, or until the cookies are lightly browned.
  7. Remove from the oven and set aside to cool. The cookies will harden a little bit as they cool. Enjoy!
