  1. Start by crushing the cookies. Roughly chop the pistachios and sacha inchi seeds.
  2. In a double boiler, melt the chocolate and butter. Take the bowl off heat, and the rest of the ingredients. Give it a good mix so that everything is coated in melted chocolate.
  3. Place half of the mixture on a piece of plastic wrap. Roll the plastic tightly to form a log. Scrunch the ends. Repeat with the remaining chocolate mixture; then place both logs in the fridge for 2-3 hours to set.
  4. When ready to serve, remove the plastic wrap and dust the logs with powdered sugar. Slice and enjoy!
