- In a saucepan, sauté the shallot and garlic on low heat until translucent.
- Add the amaranth flakes and give it a stir. Then add the water and keep stirring for 2-3 minutes until the flakes thicken. Add a bit more water if you prefer a more liquidy consistency.
- Remove from the heat and stir in the Parmesan cheese.
- Transfer to plates and add your favorite toppings. Enjoy right away!
