  1. In a skillet, melt one tablespoon of coconut oil. Then add the apples, one teaspoon of ground cinnamon, and one teaspoon of brown sugar. Mix it all, cover with the lid, and cook for a few minutes until the apples are soft.
  2. To make the topping, melt the remaining tablespoon of the coconut oil in a small skillet. Add one teaspoon of sugar, half a teaspoon of ground cinnamon, almonds, oats, and kaniwa flakes. Toast until crispy and lightly brown.
  3. Distribute the apples between two bowls and top them with crispy oats and kaniwa flakes. Serve warm and enjoy!

If you don't have almonds on hand, you can use pecans or walnuts. Instead of apples, you may give pears a try. You can also serve this apple crisp with Greek yogurt, coconut yogurt, or homemade ice cream, like lucuma vegan ice cream or camu camu mango frozen yogurt.
