  1. Place the strawberries in a small pot and cook them on low heat until they become soft and release juices.
  2. Remove the pot from heat and sweeten the mixture with honey. Set aside to cool.
  3. Once the strawberry jam is cool, you can assemble your parfait. Place half of the Greek yogurt in a cup or a bowl. Top it with half of the jam and half of the amaranth pop. Then top it with the remaining yogurt, jam, and popped amaranth.
  4. Enjoy right away!
