- Place the strawberries in a small pot and cook them on low heat until they become soft and release juices.
- Remove the pot from heat and sweeten the mixture with honey. Set aside to cool.
- Once the strawberry jam is cool, you can assemble your parfait. Place half of the Greek yogurt in a cup or a bowl. Top it with half of the jam and half of the amaranth pop. Then top it with the remaining yogurt, jam, and popped amaranth.
