  1. In a large skillet, sauté the onions until translucent.
  2. Add the garlic and cook it for a minute.
  3. Then add the carrots, salt, pepper, smoked paprika, dried thyme. Give it a stir and cook the mixture for a few minutes until everything is soft.
  4. With a potato masher, mash the beans with the lemon juice until smooth. Occasional lumps are okay. For a smoother texture, use a food processor.
  5. Combine the beans with the veggie mixture in a large bowl. Add the kaniwa flakes, beaten egg, and parsley. Adjust the seasoning to your liking.
  6. Shape into six patties. Cover them with plastic wrap and place them in the fridge to firm up for about an hour.
  7. Then brown the patties in a skillet until golden brown and warmed through. Enjoy!

You can enjoy these kaniwa flake white bean burgers on whole-wheat buns or alongside a delicious salad. They go really well with this cilantro lime cashew dressing.
