  1. In a small saucepan, melt together the peanut butter, maple syrup, and 2 tablespoons of coconut oil until well combined.
  2. Fold in the granola and amaranth pop.
  3. Using a small cookie scoop, drop the mixture by spoonfuls onto a parchment paper lined baking sheet. Place in the freezer for half an hour.
  4. Before taking the bites out of the freezer, melt the chocolate with 1 tablespoon of coconut oil. Then dip each bite in chocolate and place it back on the baking sheet. Place and store in the freezer.
