  1. Slice the papaya in half lengthwise, and using a spoon, scrape out the seeds and discard.
  2. Mix the sweetener of choice with the yogurt according to personal preference.
  3. Divide the yogurt between the two boats. Garnish them with your favorite toppings and sprinkle popped amaranth on top. Enjoy right away!

To recreate the papaya boats we feature in this recipe, you'll need 2 teaspoons of maple syrup (mixed with the yogurt), 1 banana (sliced), ½ cup of blueberries, ¼ cup of grapes (sliced), 2 tablespoons of walnuts (crushed), and ¼ cup of popped amaranth.
