  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Whisk together the milk, vanilla, applesauce, and brown sugar in a bowl. Refrigerate until needed.
  3. Combine the flour, salt, baking powder, and baking soda in a large bowl. Cut the cold butter into small cubes and blend into the flour using a pastry cutter until the mixture resembles coarse crumbs.
  4. Toss the diced apples with lemon juice and cinnamon. Add them to the flour mixture and gently fold to combine.
  5. Add the chilled milk mixture and fold with a spatula until the dough just comes together. Gather it into a disk, wrap in plastic, and refrigerate for 30 minutes.
  6. Shape the chilled dough into an 8-inch circle, then cut into 8 wedges. Place them on the baking sheet, brush the tops with milk, and sprinkle with brown sugar.
  7. Bake for 25-35 minutes or until golden brown. Transfer to a wire rack to cool slightly.
  8. To prepare the drizzle, whisk together the Greek yogurt, lucuma powder, and maple syrup until smooth. Drizzle over the warm scones and enjoy!
