  1. Soak cashews overnight in water. Drain before using.
  2. In a blender, combine soaked cashews, dates, lucuma powder, almond butter, and coconut milk. Blend until smooth and creamy.
  3. Pour into molds and freeze until solid.
  4. Melt dark chocolate and coconut oil in the microwave, stirring every 30 seconds until smooth.
  5. Remove from the molds and dip in melted chocolate. If desired, sprinkle with chopped nuts or cacao nibs. Place on a parchment-lined plate and freeze again to set the coating.
