  1. In a large bowl, whisk together the eggs, milk, salt, vanilla extract, ground cinnamon, and both flours. Let sit for half an hour to thicken.
  2. Using a small brush, lightly oil a nonstick frying pan. Then pour about a quarter cup of the batter and swirl the pan so that it evenly covers the bottom.
  3. As it is cooking, gently place two to three apple slices on the batter and sprinkle everything with about a quarter of a teaspoon of brown sugar. When the sides start to get lightly brown, gently flip the crepe using a large spatula. Cook for a minute or so until the apples caramelize a little bit. Then take it off the pan. Repeat with the rest of the batter.
  4. Enjoy warm!
