  1. Preheat the waffle iron. Lightly coat it with cooking spray or brush with oil.
  2. Add the mashed sweet potato, flour, milk, olive oil, eggs, baking powder, cinnamon, and salt to a blender. Blend until smooth and no chunks of sweet potato remain.
  3. Transfer the batter to a bowl and gently fold in the amaranth flakes.
  4. Pour about ⅓ cup of batter into the preheated waffle iron. Close and cook until golden and cooked through, about 6-8 minutes.
  5. Enjoy warm with your favorite toppings.
