- Preheat the waffle iron. Lightly coat it with cooking spray or brush with oil.
- Add the mashed sweet potato, flour, milk, olive oil, eggs, baking powder, cinnamon, and salt to a blender. Blend until smooth and no chunks of sweet potato remain.
- Transfer the batter to a bowl and gently fold in the amaranth flakes.
- Pour about ⅓ cup of batter into the preheated waffle iron. Close and cook until golden and cooked through, about 6-8 minutes.
- Enjoy warm with your favorite toppings.
