  1. In a bowl, mix together the flours, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  2. In another bowl, mix together the milk, apple cider vinegar, vanilla extract, egg, coconut oil, and sweet potato.
  3. Add the wet ingredients into the dry ingredients and give it a gentle mix. Don't over-mix.
  4. Fry the pancakes (1/2 cup of batter per pancake) on a lightly greased skillet about 3 minutes per side. Enjoy warm!
