- Preheat oven to 320°F (160°C).
- Mix all dry ingredients in a large bowl, leaving out the amaranth crispies. Add in the shredded carrot and stir well.
- Warm the wet ingredients in a pot over low heat until combined, then pour over dry mix and stir until coated.
- Spread evenly onto baking sheets and press down firmly.
- Bake for 25-30 minutes, then stir in amaranth crispies and bake 10 minutes more, until golden and crisp. Watch closely to prevent burning.
- Remove from oven, let cool completely, then store in an airtight container.
