- Soak cashews overnight in water. Drain before using.
- In a blender, combine soaked cashews, dates, lucuma powder, almond butter, and coconut milk. Blend until smooth and creamy.
- Pour into molds and freeze until solid.
- Melt dark chocolate and coconut oil in the microwave, stirring every 30 seconds until smooth.
- Remove from the molds and dip in melted chocolate. If desired, sprinkle with chopped nuts or cacao nibs. Place on a parchment-lined plate and freeze again to set the coating.
