  1. Preheat the oven to 350°F (176°C).
  2. In a large bowl, mix together the peanut butter and maple syrup.
  3. Add the oat flour and lucuma powder and give it a mix.
  4. Divide the mixture into 10 balls. If the mixture is too sticky, add a little bit more oat flour.
  5. Using a fork, flatten each ball into a cookie, leaving a mark.
  6. Bake for about 12-15 minutes or until golden brown. Keep an eye on the cookies to prevent burning. Depending on the oven, they might take slightly less or more time to bake.
  7. Cool down before serving and enjoy!
