  1. Soak the dates in hot water for 10–15 minutes to soften.
  2. In a blender or food processor, pulse oats, almonds, walnuts, and cocoa powder until coarse.
  3. Add drained dates, espresso, and puffed quinoa. Blend into a sticky mixture.
  4. Shape into balls or press into silicone molds. Refrigerate for 30 minutes to firm up.
  5. Dip each bite in melted dark chocolate and place on a parchment-lined tray.
  6. Sprinkle with extra puffed quinoa and chill until set.
