- In a large skillet, sauté the onions until translucent.
- Add the garlic and cook it for a minute.
- Then add the carrots, salt, pepper, smoked paprika, dried thyme. Give it a stir and cook the mixture for a few minutes until everything is soft.
- With a potato masher, mash the beans with the lemon juice until smooth. Occasional lumps are okay. For a smoother texture, use a food processor.
- Combine the beans with the veggie mixture in a large bowl. Add the kaniwa flakes, beaten egg, and parsley. Adjust the seasoning to your liking.
- Shape into six patties. Cover them with plastic wrap and place them in the fridge to firm up for about an hour.
- Then brown the patties in a skillet until golden brown and warmed through. Enjoy!
