- In a bowl, mix Greek yogurt with lucuma powder and vanilla extract until smooth. If you prefer it sweeter, add maple syrup to taste at this step.
- Add the crackers by gently pushing them into the yogurt from the top.
- Refrigerate for at least 6 hours or overnight until set.
- Enjoy as is, or top with melted chocolate and fresh fruit before serving.
